Considered as an important part of a vegetarian diet in the Indian subcontinent, masoor dal is know for its high levels of antioxidants and also as a good source of iron and potassium.

Preparation

You will need


1 cup of Masoor Dal
2 tsps of cornflour
1/2 cup of low fat curd
1 tsp of cumin seeds
1 bay leaf
2 tbsps of chopped onions
2 tbsps of chopped tomatoes
1/2 tsp of turmeric powder
2 tsps of red paste
2 tbsps of finely chopped coriander leaves for garnish
Tata salt to taste

Let's get cooking!

Clean, wash and soak the Masoor Dal in water for 2-3 hours.

Drain and keep aside. Combine the dal, salt and 2 cups of water in a pressure cooker for 3 whistles.

Allow the steam to escape before the lid and whisk the dal. Keep aside.

Combine the cornflour, curd and milk in a bowl and whisk well till it’s smooth.

Keep aside. Heat a nonstick pan on a medium flame and when hot, add the cumin seeds, bay leaf and dry roast for about 30 seconds.

Lower the flame, add the onions, tomatoes, turmeric powder and red paste and dry roast for a few minutes stirring continuously.

Sprinkle little water if the mixture starts burning.

Add the cooked dal, cornflour paste and 1/2 cup of water.

Mix well and simmer for 5 to 7 minutes or till the dal thickens.

Serve hot, garnished with coriander leaves.
